Carrot and Banana Bread Loaf:

Preparation: 15 minutes

Cooking: 50 minutes

Total Time: 1hr 5 minutes

Makes: 1 loaf

Texture: moist, crispy, nutty

Ingredients:

  • 1 large egg

  • 115g Yogurt

  • 2 medium ripe bananas, mashed

  • 6 tbsp maple syrup

  • 1 tsp vanilla extract

  • 60g oats

  • 1 tsp baking soda

  • 1+1/2 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 1/4 tsp salt

  • 150g Plain flour

  • 85g grated carrots, aprox 2 medium

  • (optional) 115g Walnuts + extra for decorating

Frosting:

  • 112g cream cheese

  • 40g icing sugar

  • 1/2 tsp vanilla extract


Method:

  1. In a large bowl, whisk the egg, then the yogurt, bananas, maple syrup, and vanilla.

  2. Stir in the oats, baking soda, cinnamon, nutmeg and salt.

  3. Fold in the flour, then the carrots (and walnuts if using).

  4. Next, Pour the batter into a pan lined with baking paper. Spread evenly and bake at 180c for about 50 minutes.

Frosting:

  1. Beat together the cream cheese, icing sugar and vanilla extract until thick.

  2. Spread over the top of the cooled loaf and top with the extra walnuts (if using).


This lasts up to a week refrigerated, in an airtight container.
